DENH 1070 - Applied Biochemical Nutrition for the Dental Hygienist Credits: 2 Hours/Week: Lecture 2 Lab None Course Description: This course includes the study of cellular biochemistry and general nutrition including recent advances in nutrition as it relates to oral health. It also includes the application of this knowledge to nutritional counseling and dietary analysis of dental patients within the framework of their cultural, economic, and psychosocial environment. Learning Outcomes At the end of this course students will be able to:
- explain the role diet and nutrition play in dental health and disease.
- outline the roles of macronutrients and micronutrients in metabolism, energy use, health, and disease.
- identify the components needed for the caries process to begin.
- perform a dietary analysis.
- describe the benefits and toxicity potential of specific vitamins and minerals.
- demonstrate culturally appropriate effective nutritional counseling techniques.
- select patient education materials for nutritional counseling.
- identify food sources containing specific vitamins/minerals/nutrients.
- discuss the influence of culture, age, and medications in nutrition.
